Makes approximately 8-10 servings.
Ingredients
10 large brown onions (or a mix of red and brown)
250ml of cola
50ml Jack Daniels
2tblsp butter
1tblsp olive oil
1tblsp garlic powder
Salt to taste
Method
Peel and dice all of your onions.
Melt your butter in a large sauce pan.
Add your oil to the butter to stop it burning.
Add your onions and stir to coat in the butter and oil.
Place your pan on the smallest ring on your hob and turn it down as low as it will go.
Add your garlic powder and stir again.
All to cook for 6hrs, checking and stirring every half an hour or so, to make sure the onions aren’t sticking or burning.
The onions will brown gradually, but should not be burnt. If you notice any burning or excessive drying out, add a splash of cola.
After 6hrs, add your Jack Daniels and cola to the onions.
Cook for another two hours, checking and stirring every half an hour or so, until everything is sticky and caramelised.
Add salt to taste, stir and enjoy!
